Uttappam FAIL!
Mar. 26th, 2009 07:23 pmUttappam are yummy Indian pancake/crepe type things, savory and accompanied by savory toppings. They are made with batter that consists of rice, lentil and wheat flour (though I guess traditionally not wheat?). I got some instant Uttappam mix from the Indian grocery and set out to try frying some up this evening.
Fail. I got fried tasty mush, not a pancake. For some reason they wouldn't hold together. The hubinator managed a bit better, but there was still falling apart issues. We were using a frying pan, not a tava as proscribed. I think, at the very least, I need a griddle. It would help flipping not to have to approach with the spatula at an angle, maybe?
This is very frustrating. The fried mush was tasty, and hinted at the possibility of even greater uttappam yumminess. I will have to try again at some point.
